Quick no Yeast Dry Doughnut recipe

How about an Instant hot dry doughnut for an indulgent day?

During my research on food trends I came across the instant wet doughnut recipe and I quickly thought of a dry version (which is a firm favourite with most Ghanaians).

I looked in my fridge and I still had some homemade Yoghurt and Condensed milk left. I quickly checked my cupboards for self raising flour and voila it was there.

Doughnuts are found in most street corners in Ghana particularly at breakfast and at lunch time. Maybe things have changed since, as boutique food joints are springing across the country, hence might be available in the evenings.

Doughnuts are a universal favourite treat, where Ghanaians refer to them as Bofrot/Toogbei, Nigerians as Puff Puff, the Congolese Mikate, Liberians as Kala and in most Francophone African states as Beignet and there a similar versions known as Mandazi in Eastern and Southern Africa.

For this recipe I needed the gluten to be activated, hence I kneaded it for 10 minutes, allowed it to rest for 20 minutes and then kneaded it again and cut into golf sized balls. There’s no need to let the doughnut rise as it puffs up when fried.

INGREDIENTS

300g of self raising flour

200g of Greek Yogurt

4 tablespoonful of Condensed Milk

50g of Butter

2 tablespoonful of Vegetable Oil

30g of Self Raising flour for dusting

Optional pinch of Salt and grated Nutmeg.

300ml of  Vegetable Oil for frying.

Substitutes – In the absence of Greek Yoghurt, you can use Natural Yoghurt instead. As Natural Yoghurt has a liquid consistency use 150g.

If you don’t have Condensed Milk, add 2 tablespoonful of Sugar and increase the butter by 15g.

VERDICT– This recipe makes for a crunchy outer layer with a Gungy filling. For a drier filling do omit the oil.

How to make Condensed Milk at home

Can you believe you only need 2 ingredients to make this? Perfect for your Ice Creams, doughnuts, candy or most sweet bakes etc

Once you make your Condensed Milk, place it in a sterilised Jar and cover it tight.  It stores in the fridge for 2 weeks.
Once opened consume within 3 days.

INGREDIENTS

2 litres of Organic Whole / Full Fat Milk

500g of White Sugar

The Ghanaian Rice Porridge recipe

‘Rice Water’ as affectionately called in Ghana, is Rice Porridge which has a slight smoky taste to it when cooked on an open wood fire. It’s basically Rice cooked in water until it transforms into a mushy porridge like texture. It’s  a popular breakfast choice in Ghana.
It’s a relatively easy, gluten free porridge to make where type of rice used isn’t specific to one, but what one has available.
The rice porridge can be enjoyed in its  basic form, infused with Lemongrass, with milk or an optional fruit to enjoy.
Rice water can be enjoyed at breakfast and also comes in handy during the sudden hunger pangs one might experience some evenings.
My very first experience of cooking independently (I was about 8 years old) , was when I made Rice water  for my Mum who was at the time ill.
It was a disaster as I used too much water, added uncooked rice and ended up with a mushy uncooked textured rice porridge.
Guess I’ve improved since.
My favourite flavouring to Rice Porridge is Lemongrass as it meant I needed just little Sugar for my porridge.
In comparison to Rice pudding, Rice Water/Porridge is lighter and has less calories.
INGREDIENTS
50g of white or brown rice
300ml of water
A pinch of salt
1 tablespoonful of Sugar
100ml of full fat milk
METHOD
Wash your rice and place a saucepan with the water on a medium heat.
Add the washed rice  to the saucepan and cook gently for 20 minutes.
Reduce the heat to the lowest setting and add the Sugar and Milk.
Cook for another 3 minutes and serve immediately.

KELEWELE: The traditional Ghanaian spiced Plantain snack

‘Kelewele’ is a popular Gluten free, Ghanaian street food snack made from ripened Plantain and ground spices.
The whiff of the wood fire smell mixed with sweet and aromatic greasy smell of the fried spicy Kelewele when bought on the streets of Ghana is an experience to behold.

Interestingly, Kelewele is only available each evening till late and hardly during the day ( I stand corrected if that has changed recently).


Whenever next you’re Ghana, why not enquire about it or better still make your own ‘Kelewele’ by following this simple recipe.

I’ve read on a few occasions  where individuals are having  difficulty in getting the spices to stick to the ripened Plantain when fried.

TASTE

Kelewele has an aromatic, spicy candy like flavour. You can reduce the amount of Chillies to suit your personal preference.

2 large ripened Plantain

1 medium sized Onion

1 teaspoon of Aniseed

1 Calabash Nutmeg or 6 Allspice pods

10 cloves

1 tablespoon of Black Peppercorns

1 Habanero Chilli or 5 dried Red Chillies

30g of fresh Ginger

Salt to taste

 

TO SERVE

Tastiest Asparagus shaving Salad recipe

Make this quick, nutritious and delicious Asparagus shaving Salad.

 

INGREDIENTS

400g of Asparagus

2 large sliced Banana Shallots or Red Onion

100g of Bulgar Wheat / Fonio/ Quinoa/ Couscous

4 tablespoonful of Garlic Oil

100g of baby Plum tomatoes or Sun dried Tomatoes

30g of chopped Parsley/Basil/Coriander

Salt and Pepper to taste

150ml of hot water

Zest of 1 Lemon and juice of half the Lemon

1 tablespoonful of Apple Cider Vinegar

1 teaspoon of Sugar

Amazing Vegan Green Plantain recipe

In Ghana, Plantain chips (made from fried Green Plantains) are a favourite snack amongst the locals .

It’s mesmerising watching the Plantain Chips seller, peel, slice and fry the Plantain right before your eyes. The buttery golden colour, crunchy texture and naturally sweet nature of the Plantain chips topped with roasted Peanuts will have you smiling and snacking more.

It was interesting to discover the same Green Plantain cooked in a different way in both Jamaica  and Puerto Rico where I’ve paid homage to in the recipe. A perfect vegan and gluten free snack that works perfectly for Canapés.

Green Plantain is available in all African and Caribbean grocers and some supermarkets in the UK also do stock them.

 

INGREDIENTS

2 large peeled Green Plantains

200ml of Vegetable/Peanut oil for frying

Optional sprig of fresh Rosemary

Salt to taste

Easy French Fries Recipe

Do we still say ‘Thank God it’s Friday’? And look forward to Fridays as we did in the past? A day that signified a break from going into the office and catching up on your shopping, cleaning, cooking, socialising etc

Anyway I’ve uploaded a step by step recipe guide on how to make your own French Fries using Yam. The recipe also works perfectly with Potatoes.
I’ve shared tips on how to reduce the slight bitterness that Fried Yam can sometimes have.

INGREDIENTS

400g of sliced Yam French Fries

1 tablespoonful of Sugar

1 teaspoon of Salt

1 tablespoonful of Beef Fat/Dripping/Salted Beef (optional)

1 litre of Water

200ml of Vegetable/ Peanut Oil for frying

Easy Vegan Papaya /Pawpaw Pudding

During one of my many conversations with Mum, she revealed her favourite childhood  Vegan pudding Grandpa made for the family. A pudding made from fresh Corn, Peanuts and sweetened with ripened PawPaw (Papaya). that were all harvested from the farm.

When Mums vibration of pitch heightens, I know it’s a great memory of hers and I feel more connected hearing her tales. She emphasised the pudding was a treat that GrandPa treated the family to as a thank you for their hard work at the farm.

Mum explained during her childhood Sugar was an expensive ingredient, hence they relied  on fruits and vegetables such as , Papaya, Pineapple Sweet Potatoes etc to sweeten most of their dishes.

I wanted to recreate that feeling and memory again for Mum, particularly when my Aunties from the Togolese side of my family visited (pre Corona era).

I quickly got the 3 main ingredients required for the recipe and under the tutelage of Mum recreated her childhood fond memory.

The stories and fondness associated with this pudding meant I had to share this recipe as it has become one of my favourite all natural pudding.

Inspired by this memory I created another version

INGREDIENTS

200g of soaked Raw Peanuts for a minimum of 2 hours

300g of fresh Corn Kernels

1 litre of Water

1 large ripened PawPaw/Papaya

Pinch of Salt to taste

How to cook the tastiest Steak simply

How to cook the perfect Steak
The thought of a plate of Pan fried Steak with Parmesan shavings, soft Garlic on a bed of Rocket salad made me smile.

As I tucked into each bite I missed my friends and the bi weekly, Pub meal treat we used to have (pre lockdown century). it does feel like a century…
The only way I knew how not to dwell on the feeling of ‘loss’, was to treat myself to a simple Steak cooked perfectly for me.

I like my Steak Medium Well, how do you like your Steak?

For the ingredients,

Grab 400g of any Steak you can afford

1 tablespoonful of Butter

5 tablespoonful of Vegetable or Peanut Oil

Half a teaspoon of freshly milled black peppercorns

2 medium Rosemary stalks or 1 teaspoon of dried Rosemary

4 cloves of Garlic

Salt to taste

300g of Rocket Leaves

30g of Parmesan shavings

The tastiest Corned Beef Pie (TURNOVER)

Make this easy to follow Corned Beef Turnover recipe which is popularly referred to as Meat Pie in Ghana.

The recipe is inspired by the rich and flaky Ghanaian Meat Pie with a twist of flavour.

The Ghanaian Meat Pies in question are actually Turnovers if we have to go by the definition of a Pie.

Turnovers are known as pastries where the fillings are placed in the middle of each dough, folded, sealed and crimped whereby Pies are ingredients  typically baked in a pastry dough casing.

But then I prefer to name mine Ghana Meat Pies ooh!

There are 3 main elements that makes a perfect rich Ghanaian Meat Pie, namely;

*the crust of the pasty when baked should have a slight crunch

* the pastry needs to be moist when baked

* the filling needs  to be generous and equally moist

I have incorporated these 3 main elements and customised the recipe to help even a novice at cooking.

Typically you won’t find Caraway seeds in a Ghanaian Meat Pie (that’s a personal choice of mine which I highly recommend).

In the absence of Caraway seeds you can add Aniseed or omit it all together.

TIPS

When mixing the short crust pastry be gentle with it and avoid overworking the dough. This will prevent the activation of the Gluten in the flour.

Add your liquids a little bit at a time to prevent an extremely wet dough.

 

INGREDIENTS

300g of Self Raising Flour

25g of flour for dusting

150g of Cold Grated Butter

1 teaspoon of Salt

1 Egg Yolk

1 teaspoon of Caraway seeds (optional)

1 tablespoonful of Milk Powder or 60ml of Whole or Evaporated Milk

CORNED BEEF FILLING

1 Marks and Spencer’s tin of Prime Corned Beef

100g of slow cooked Baby Plum/Cherry or Sun-dried Tomatoes

3 large sliced Banana Shallots or 2 large Onions

Half a teaspoon of Red Chilli flakes

Half a teaspoon of coarse ground Aniseed or Fennel seeds

1 tablespoonful of Olive Oil

1 tablespoon of Butter

2 tablespoonful of Greek Yogurt

Half a teaspoon of freshly milled Black Peppercorns

Add Salt to taste (this can be omitted as Corned Beef generally is salty)
