250g of Bucatini or Spaghetti

250g of Tuna Stew

1 tablespoonful of grated Parmesan

Few fresh Basil leaves

Easy Flat Bread recipe without yeast

Flat breads are versatile and can be used for stews, soups, sandwiches etc
Homemade Flat bread couldn’t be easier, especially as it’s ready under 10 minutes. This recipe is without Yeast and makes for a moist Flat Bread.

2 tablespoonful of Natural Yoghurt
100ml of lukewarm water

Cabbage Stew made easy (Sweetheart Cabbage)

Sweetheart Cabbage is a variety of the Cabbage family. The Sweetheart Cabbage is tender and sweeter in comparison to the popular Cabbage used in most household.

In the absence of Sweetheart Cabbage you can use the normal one.

The stew is also made with smoked Bacon Lardons, Chorizo and salted Goat Meat which gives the dish an incredible Umami flavour.

INGREDIENTS
2 Sweetheart Cabbages or your normal Cabbage
2 large Onions
20g of diced salted Goat Meat/Beef
300g of diced Chorizo
250g of Smoked Bacon Lardons
3 Grains of Selim (Hwentia) or half a teaspoon of freshly milled Black Peppercorns
2 tablespoonful of Tomato Purée
1 teaspoonful of Chilli flakes
1 medium size diced Yellow, Red and Green Bell Peppers
2 medium size diced Carrots
6 tablespoonful of Groundnut or Vegetable Oil
7 fresh Basil leaves
Salt and Pepper to taste


TOMATO BLEND

150g of sun ripened Tomatoes
1 large Red Bell Pepper
1 teaspoonful of Aniseed
1 teaspoonful of Cumin seeds
3 cloves of Garlic
3 mild Red Chillies
5 smoked Shrimps or CrayFish
20g of Ginger

TO SERVE
Best enjoyed with a steamed bowl of Rice, Spaghetti, Boiled Potatoes, Yam, Plantain or your preferred Carbohydrate.

Mediterranean Chickpea & Halloumi Salad

Mediterranean Chickpea Salad is refreshing, nutritious and easy to make.
The ChickPea salad recipe also boasts of a sweet and tangy homemade Yoghurt dressing with a touch of Cumin seeds.

To make this powerhouse of a Salad, you’ll need the following;

INGREDIENTS
250g of cooked Chickpeas
200g of Halloumi / Wagashi / Paneer
1 medium sized Cucumber
1 medium sized Red Onion
2 large or 4 medium sized Tomatoes
1 mild Red Chilli
1 tablespoonful of chopped Carrot Tops or Parsley
Fresh Mint leaves to garnish

40ml of blended Natural Yoghurt
2 tablespoonful of Honey
10ml of Extra Virgin Olive oil
1 levelled teaspoon of Cumin seeds
Salt and Pepper to taste

Easy Hummus recipe to try

Let’s start the week with this easy to follow Hummus dip without using a blender.

Serve with Pita bread, Carrot sticks, Cucumber, Celery sticks etc

 

INGREDIENTS

250g of Cooked Chickpeas

2 tablespoonful of Sesame seeds

2 cloves of Garlic

1 teaspoonful of Cumin seeds

2 tablespoonful of Natural Yogurt or the Juice and Zest of 1 Lemon

4 tablespoonful of Extra Virgin Olive oil

Garnish with either smoked Paprika, cooked Chickpeas, Cumin seeds or Sumac

Salt to taste

Can we call this Jollof? Ma Tricky Wo Jollof Rice Recipe

Controversy alert!

In a world where lockdown is the new normal, ones mental health can suffer; however creating a little controversy here and there does help especially in the Kitchen or?

Okay! Hear me out… hmm…so Jollof Rice to the eye must have that distinctive  deep Orange colour, be well spiced and have a smoky undertone flavour. Tackling the ‘colour’ issue technically means this Smoked Shrimp Red Rice recipe passes as Jollof Rice or?

Traditionally, one uses Tomatoes and Tomato Purée to achieve the distinctive deep Orange colour, however this dish omits them as the colour is derived from the Smoked Shrimps.

Now that I’ve made my argument, I would like to know, is it in the process of cooking Jollof Rice and or sticking to the sacred ingredients that qualifies it as Jollof Rice?

200g of Smoked Shrimps, Prawns or Crayfish

2 large Banana Shallots or any Onion of your choosing

4 tablespoonful of your preferred oil for frying

1 teaspoonful of Chilli flakes

5 Sichuan Peppercorns /1 teaspoon of Aniseed / 2 Star Anise

2 tablespoonfuls of a Ginger, Garlic, Onion and Aniseed blend

30g of chopped Spring Onions

1 tablespoonful of Organic Coconut oil

2 Bay leaves

Salt to taste

5 diced Green mild Chillies

60g of smoked dried Shrimps, Prawns or Crayfish

1 levelled tablespoon of Cumin seeds

5 Sichuan Peppercorns or 1 teaspoon of Aniseed

Salt and Pepper to taste

Best served with a bowl of Garlic fried Rice

The best Lemon Cod recipe

Fridays and Fish are celebratory moments that needs to be cherished and celebrated.

In the name of all things celebratory to the end of a working week, how about this simple, crunchy and aerated Cod Fish Goujons recipe.

A recipe which doesn’t require either sparkling water or beer for that aerated crunch. The recipe also includes an easy and tasty Lemon sauce which compliments the Cod Goujons perfectly.

To make these tasty Cod Goujons you’ll need the following;

 

INGREDIENTS

400g of Cod Loins

150g of Corn starch or Plain flour

1 levelled teaspoon of Sea Salt

1 levelled teaspoon of freshly milled Black Peppercorns

2 Egg Whites

1 Egg Yolk

3 zest and juice of large Organic and I waxed Lemons

1 levelled tablespoon of Sugar

150ml of Water

200ml of Vegetable oil for deep frying

How to achieve the crispiest Fish skin in the Oven

Good evening creatives. Hope everyone is doing just great. Anyway I’ve got some good news for you in the form of achieving that crispy Fish skin using the Oven.

To make this you’ll need the following ingredients;

 

INGREDIENTS

2kg of Salmon Fillet

1 tablespoonful of Apple Cider Vinegar

1 teaspoon of Sea Salt

20g of Anchovies in Oil or Abobi (Keta School Boys)

1 teaspoon of Cumin seeds

3 mild Green Chillies

Half a teaspoon of Black Peppercorns

5 Cubeb spice (in the absence of this add the zest of 1 Lemon or a tablespoon of Lemon juice)

4 tablespoon of Olive Oil

 

TO SERVE

Serve the grilled Salmon with a portion of Rice and Peas and my Carrot & Orange salad
