INGREDIENTS 

Prekese & Ginger Tea
1 teaspoonful of Buy Ndudu Prekese (Aidan fruit) powder
200ml of Water
100ml of spiced fresh Ginger juice
Half a teaspoon of Honey (optional)

Sorghum leaves & Ginger Tea
1 teaspoonful of Buy Ndudu Sorghum Tea blend
250ml of Water
100ml of spiced fresh Ginger juice
Half a teaspoon of Honey (optional)

Hibiscus & Ginger Tea
100g of Hibiscus leaves
3 strands of Sorghum leaves or half a teaspoon of Buy Ndudu Sorghum powder
1 Star Anise
2-3 Grains of Selim pods (Etso / Hwentia)
400ml of Water
100ml of fresh Ginger juice
1 tablespoonful of Honey (optional)

Ginger, Pineapple & Orange juice
100ml of fresh Ginger juice
80 ml of Pineapple Concentrate
100ml of freshly squeezed Orange juice with bits

Unpeeled fresh Ginger & Mixed Citrus fruit juice
400ml of fresh Ginger juice
Juice of 3 Clementines
Juice of 1 large Lemon
Juice of 1 large Grapefruit
1 cinnamon stick
10 cloves

Three years ago I shared a Cornmeal & Gari Banku recipe and in the comment section someone mentioned White Vinegar.

Prior to the comment left, Mum had suggested previously I add Vinegar when I had no fermented Corn dough to my mixture. The texture and flavour of the Banku remains the same.
I’ve since used this process and served many guests who have loved it.

INGREDIENTS
300g of Corn Meal
160g of Tapioca Powder
420ml of Water
Organic Apple Cider Vinegar 80ml (if you’re using White Wine Vinegar – 40ml)
Salt to taste
