Can we call this Jollof? Ma Tricky Wo Jollof Rice Recipe

Controversy alert!

In a world where lockdown is the new normal, ones mental health can suffer; however creating a little controversy here and there does help especially in the Kitchen or?

Okay! Hear me out… hmm…so Jollof Rice to the eye must have that distinctive  deep Orange colour, be well spiced and have a smoky undertone flavour. Tackling the ‘colour’ issue technically means this Smoked Shrimp Red Rice recipe passes as Jollof Rice or?

Traditionally, one uses Tomatoes and Tomato Purée to achieve the distinctive deep Orange colour, however this dish omits them as the colour is derived from the Smoked Shrimps.

Now that I’ve made my argument, I would like to know, is it in the process of cooking Jollof Rice and or sticking to the sacred ingredients that qualifies it as Jollof Rice?

INGREDIENTS

200g of Smoked Shrimps, Prawns or Crayfish

2 large Banana Shallots or any Onion of your choosing

4 tablespoonful of your preferred oil for frying

1 teaspoonful of Chilli flakes

1 tablespoonful of Cumin seeds

6 Black Peppercorns

5 Sichuan Peppercorns /1 teaspoon of Aniseed / 2 Star Anise

2 tablespoonfuls of a Ginger, Garlic, Onion and Aniseed blend

350g of soaked Basmati Rice

150ml of Water or your preferred stock

30g of chopped Spring Onions

1 tablespoonful of Organic Coconut oil

2 Bay leaves

Salt to taste

 

TO SERVE

Serve with a portion of my Okra Stir fry, Grilled Salmon or your preferred protein.

THE TASTIEST WEST AFRICAN GREEN CHILLI SAUCE RECIPE

The Ghanaian Green Shito recipe

Introducing an all natural flavour packed sauce that doubles up as a marinade for Lamb or Goat Meat.

Im currently testing it with Chicken and I’ll update you with the verdict later.

The recipe makes for a mild, tangy Green Chilli Sauce with subtle hints of seafood and a smoky taste. For a spicier version you can use Green Habanero Chilli or Scotch Bonnet.

Add a few teaspoonful to your fried Rice, Scrambled Eggs or Potato salad. Use this sauce the way you would Ketchup and also as a marinade.

MARINADE YOUR LAMB WITH THE GREEN CHILLI SAUCE


INGREDIENTS

100g of mild Green Chillies

150g of Pettie Belle Chillies (Kpakposhito) – in the absence of this Chilli you can increase the amount of mild Green Chillies to 200g and add 1 Green Bell Pepper

100g of Squid Rings/Scallops/Fresh Prawns/Snail

200ml of Rapeseed/Groundnut/Peanut oil

4 large Onions

4 cloves of Garlic

2 tablespoonful of Apple Cider Vinegar

200g of Parsley

70g of smoked Shrimps

Salt to taste

 

ROAST SHOULDER OF LAMB

1 zest and juice of Lime

1.5kg shoulder of Lamb

1 tablespoonful of Cumin seeds or powder

1 tablespoonful of Salt to taste

QUICK AND EASY CHICKEN STIR FRY RECIPE

Imagine bitting into this bowl of goodness within 15 minutes. Please note you can use any Vegetables of your choosing for this recipe.

Let’s go…

You’ll need ;

INGREDIENTS

2 large thinly sliced Chicken Breasts

2 tablespoonful of Sesame Oil

4 tablespoonful of Groundnut or Peanut Oil

1 tablespoonful of grated Ginger

1 large crushed clove of Garlic

2 tablespoonfuls of Hoisin Sauce

2 tablespoonfuls of Oyster Sauce

3 tablespoonfuls of Dark Soy sauce

Half a teaspoon of freshly milled Black Peppercorns

2 julienne cut Carrots

1 sliced Green, Red and Yellow Bell Peppers

50g of thinly sliced Purple Cabbage

1 large sliced Banana shallot or any Onion you have available

2 thinly sliced mild Red Chillies

30g of chopped Spring Onions

1 tablespoonful of Corn Starch

7-10 fresh Basil leaves

1 teaspoon of Pink Himalayan Salt

TO SERVE

Serve with a bowl of steamed Rice or Noodles. Personally I prefer it on its own.

LACTOSE FREE CREAMY TOMATO SOUP RECIPE
Lactose free creamy Tomato soup

On a cold winter day, enjoying a bowl of homemade, hot and creamy Tomato soup (which is lactose free) with a slice or two of baguette can lift your gloomy mood. How about making this nutrient dense, all natural flavour packed soup recipe. All you’ll need are;

INGREDIENTS

SLOW ROASTED TOMATOES

1kg of Tomatoes

1 large diced Onion / Banana Shallots

2 cloves of Garlic

4 tablespoonful of Olive oil

Half a teaspoon of Salt

Quarter of  a teaspoon of milled BlackPeppercorns

THE SOUP

2 grilled Scallops/ Shrimp powder (Optional)

1 teaspoon of smoked Paprika

1 deseeded and chopped Chilli or a quarter of a teaspoon of Cayenne Pepper

1 chopped Celery stalk

20g of Cashew Nuts

750ml of Water/ Vegetable / Chicken stock

1 tsp of smoked Paprika

TO SERVE

Serve with sun dried Tomatoes marinated in Olive oil and drizzle with a little of Garlic oil. Serve also with a slice or two of your favourite rustic bread.
