INGREDIENTS

4 Chicken Legs

500g of Potatoes

6-8 Bay leaves

3 teaspoonful of BUY NDUDU’S Ataadi Green Chilli Anchovy Sauce

5 tablespoonful of Olive oil

1 levelled teaspoon of Rosemary

1 tablespoonful of Cumin seeds

1 levelled teaspoon of Cubeb

3-4 large Banana Shallots or any Onion of your choosing

30g of fresh Ginger

Salt to taste

100ml of freshly squeezed Orange juice with bits

Homemade Krispy Fried Chicken

Fridays are my days of indulgence and as such I created this aromatic Crispy Fried Chicken. I served this with some Yam fries , Green Chilli sauce and a side Salad. The Salad was to ease my guilt as I bit into each juicy crispy Chicken. Go ahead and treat yourself.

TIP
Please preheat your Oven to 140*c and place your fried Chicken in till you’re ready to eat. It keeps it warm whilst you fry your Chips.

 

INGREDIENTS

1kg of Chicken Drumsticks

1 teaspoonful of dried Rosemary

2 levelled tablespoon of freshly milled Black Peppercorns

5 tablespoonful of Greek or Natural Yoghurt/ Buttermilk or Kefir

1 tablespoonful of Green Chilli sauce

300ml of Vegetable oil for frying

Salt to taste

 

FLAVOURED FLOUR

1 cup of Plain flour or All Purpose flour

1 tablespoonful of Corn Starch

1 teaspoon of Salt

1 tablespoon of Chinese 5 spice mix (readily available in most grocers)

2 cups of Cold Water in a deep bowl

 

TO SERVE

Serve with Yam fries and Green Chilli sauce.

Easy French Fries Recipe

Do we still say ‘Thank God it’s Friday’? And look forward to Fridays as we did in the past? A day that signified a break from going into the office and catching up on your shopping, cleaning, cooking, socialising etc

Anyway I’ve uploaded a step by step recipe guide on how to make your own French Fries using Yam. The recipe also works perfectly with Potatoes.
I’ve shared tips on how to reduce the slight bitterness that Fried Yam can sometimes have.

INGREDIENTS

400g of sliced Yam French Fries

1 tablespoonful of Sugar

1 teaspoon of Salt

1 tablespoonful of Beef Fat/Dripping/Salted Beef (optional)

1 litre of Water

200ml of Vegetable/ Peanut Oil for frying

QUICK MEATY RICE RECIPE

Introducing a quick one pot Rice dish that’s packed with natural flavours and a perfect comfort food for a working week.

You can use Brown Rice instead of White Rice and also replace the minced Meat with either Turkey, Chicken or Pork.

Considering this recipe requires a few ingredients the outcome in terms of flavour is unparalleled to any other Rice recipes.

INGREDIENTS

300g of minced Beef

250g of Basmati Rice

2 medium sized sliced Onions

100g of Butter

1 tablespoonful of Aniseed

1 Bay leaf

4 tablespoonful of Suya spice Mix

1 tablespoonful of Smoked Paprika

1 tablespoonful of Mixed Herbs

1 tablespoon of Salt and Pepper to taste

300ml of Water or stock

 

TO SERVE

Serve with fried Plantain , Salad or steamed Vegetables
