Spring Feta & Chickpeas Soup using Buy Ndudu’s Rose Harissa Spice blend

Feta & Chickpeas Soup recipe

Let’s make this quick and equally delicious Feta & Chickpeas soup using Buy Ndudu’s Rose Harissa Spice blend.

The soup can be enjoyed both warm or cold with ingredients that are accessible. Grab a bottle of our in house Clay Smoked Rose Harissa blend for this recipe.

INGREDIENTS

250g of cooked Chickpeas

80g of Feta

50g of all natural Yogurt

5 tablespoonfuls of Extra Virgin Olive oil

1 large Onion

2 tablespoonfuls of our Rose Harissa Spice blend

30g of chopped green parts of a Spring Onions

5 mint leaves

3 cloves of fermented Garlic or 2 cloves of Garlic

3 wild Garlic leaves & flowers (optional)

3 tablespoonfuls of Olive oil to warm up the cooked Chickpeas

1 tablespoonful of Raw Honey or the fermented Garlic Honey

Salt to taste

Feta & Chickepeas Warm Soup recipe

METHOD

Blend the Yogurt and Feta into a silky smooth consistency and transfer into a bowl

Dry roast the Rose Harissa for 30 seconds and add 1 tablespoon to the blended Feta

Add the Extra Virgin Olive oil, Salt to taste and the Spring Onions

Add the fermented Garlic and Honey

Mix till well combined and leave in the fridge whilst you tend to the Chickpeas

To a pan add your Olive oil, Salt to taste and Onions. Let it fry gently for 2 minutes and add the cooked Chickpeas.

Slow cook for 8 minutes until it’s warmed through. Add the remaining Rose Harissa and cook for a further minute.

Turn the heat off and add the Mint, Garlic leaves and Flowers.

At this point your Feta blend should be cold. Add the hot Chickpeas to the chilled Feta blend and your lunch is ready.

150g of roasted Coffee Beans

1 African Nutmeg
5 Cloves
5 Grains of Selim pods (Hwentia/Etso)
10g of fresh Ginger (optional)

Iced Coffee

55g of Café Touba or 2 tablespoonful of Coffee Granules mixed with 3 tablespoonful of hot water
50ml of Condensed Milk
300ml of full fat Whole milk
Ice cubes
Add Brown Sugar to suit your personal taste

Sweet Potato Porridge (Nagoti Dzogbo)

Introducing a gluten free, quick, sweet (sugar free) and savoury breakfast is this indigenous Sweet Potato Porridge from the Eweland of Ghana called Nagoti Dzogbo.

Made from Sweet Potatoes and a few ingredients you’ll have this Nagoti Dzogbo  ready in under 10 minutes.

In Ghana there are different variations of this dish called Mpotompoto, where Fish stock is used as the base for the recipe.

The Chillies can be omitted from this recipe if it’s made for a toddler.

INGREDIENTS

2 large peeled and diced Sweet Potatoes
1 medium sized Onion
5 Green Chillies (optional)
3 tablespoonful of Zomi (spiced Palm Oil)
180ml of Water

Black Eyed Beans fritters recipe from scratch

Black eyed bean fritters is a popular West African snack, which is also enjoyed by Brazilians and Cubans. The dish was introduced to West Africa by the Hausa’s , who predominantly live in Nigeria and some parts of West Africa, such as Ghana, Sierra Leone, Cameroon etc
This is an improved recipe to achieve that crunchy outer layer and fluffy flesh. A recipe that mimics exactly what you buy from the Koose or Akara seller.
 
INGREDIENTS 
350g of peeled Black Eyed Beans
60ml of Water
2 large Banana Shallots
1 Habanero Chilli 
 
OPTIONAL
50g of Diced Bells Peppers
30g of chopped Spring Onions
1 medium sized diced Onion
Salt to taste

TIPS
The batter must have a textured consistency to achieve the famous crunchy outer layer
 
The batter must be beaten till its aerated or has a soufflé consistency 
This can be achieved easily by using your hand mixer or stand mixer.
Please note it took between 15-20 minutes to achieve the perfect aerated consistency using my stand mixer
Heat your oil for 5-7 minutes on a medium heat and maintain that heat till you’re done frying.
The advantage of having the aerated batter consistency means your Akara cooks perfectly and will not be soggy.

Introducing a quick Sourdough French Toast recipe served with Avocado salad and Omelette.

INGREDIENTS
Sourdough or any other bread you have available
3 Eggs
Quarter of a teaspoon of Cinnamon powder
30ml of Whole Milk
1 tablespoonful of Vegetable oil/ Groundnut oil or alternatively you can use Butter

1 medium sized Avocado
1 small diced Banana Shallot
2 diced Green Chillies
30g of diced mild Red Chillies
30g of chopped Parsley
1 tablespoonful of Apple Cider Vinegar
3 tablespoonful of Extra Virgin Olive Oil
Salt and Pepper to taste

TO SERVE
Serve with a chilled glass of Orange , Pineapple or Watermelon juice

How to cook the perfect Steak
The thought of a plate of Pan fried Steak with Parmesan shavings, soft Garlic on a bed of Rocket salad made me smile.

As I tucked into each bite I missed my friends and the bi weekly, Pub meal treat we used to have (pre lockdown century). it does feel like a century…
The only way I knew how not to dwell on the feeling of ‘loss’, was to treat myself to a simple Steak cooked perfectly for me.

I like my Steak Medium Well, how do you like your Steak?

For the ingredients,

Grab 400g of any Steak you can afford

1 tablespoonful of Butter

5 tablespoonful of Vegetable or Peanut Oil

Half a teaspoon of freshly milled black peppercorns

2 medium Rosemary stalks or 1 teaspoon of dried Rosemary

4 cloves of Garlic

Salt to taste

300g of Rocket Leaves

30g of Parmesan shavings

Nothing beats a moist, fall off the bone Chicken with crispy skin which is equally  packed with flavours. A great way to preserve your Chicken for much longer. Shred the Chicken and use it for sandwiches or stir fries. To try this recipe you’ll need the following ;

INGREDIENTS

3 Chicken Legs

2 heaped tablespoonful of Sea Salt flakes

30g of sliced Ginger

5 crushed Star Anise or 1 tablespoonful of Aniseed

8 crushed All Spice pods

4 Grains of Selim pods

4 cloves of crushed Garlic

30g of Thyme

10 Cloves

3 Bay Leaves

1 tablespoonful of Black Peppercorns

2 litres of Olive oil or Duck fat

TO SERVE

Best served with mashed Potatoes, Beans or Ratatouille.
